Traditional dishes of Uttarakhand cuisine

The state of Uttarakhand is every food lover’s dream come true with its incredible collection of memorable and lip smacking food items. Although with growing tourism in these parts the foods available at restaurants are the tried and tested north Indian or Chinese however, the food that you have here cannot be tasted anywhere else making it a haven for every foodie. Traditional Garhwali food is extremely special in so many ways. The food offered and prepared here is bursting with authentic flavors and each cuisine stays true to its taste without the spices overpowering the original taste. Garhwali preparations are rich in nutrient factor and hold a number of health benefits due to the inclusion of various herbs, lentils, cereals and pulses.

Authentic Garhwali Cuisines:

Thenchwani:

The main ingredients in this dish are mountain radish root and mountain potato, which are crushed along with some ginger and garlic. These are then mixed with aromatic and delectable spices that highlight the earthy flavors of the dish.

Chaunsu:

Prepared using black lentils, this protein-rich gravy begins with roasting the lentils until aromatic, then grinding them into a powder. This powder is later cooked to form a flavorful curry.

Phaana:

A traditional Garhwali preparation made from lentils like Gahat or Kulath. The lentils are soaked for 8 hours, ground into a thick batter, and used to prepare a hearty gravy. The batter can also be used to make pancakes, cooked alongside the main dish.

Kaafuli:

A healthy version of North India’s saag, this dish is prepared using fresh spinach, onion, ginger, garlic, and aromatic spices. A thick rice paste is added to give it a rich texture. It is served as a colorful and nutritious accompaniment.

Kode ki Roti:

This special roti is made from a local grain called Koda or Ragi, abundant in the hills and rich in iron and fiber. Typically served with dal, it is both hearty and wholesome.

Authentic Kumaoni Cuisines:

Aloo Ke Gutke:

A simple yet flavorful dish consisting of fried potatoes seasoned with red chili flakes, coriander leaves, and local spices. Widely available as a street food, it's considered an iconic comfort dish of the hills.

Bhatt ki Churkani:

A favorite among Kumaoni communities, this dish is prepared using locally grown black soybeans. Blended with rice paste, it becomes a highly nutritious and beloved delicacy of the region.

Dubuk:

One of Kumaon’s most traditional dishes, Dubuk is made using Arhar, Gahat, or other lentils. The stock is ground into a fine paste with rice flour, then cooked with aromatic powdered spices over a slow flame.

Bhang ki Chutney:

A zesty side dish made with roasted bhang (hemp) seeds, garlic shoots, sour pomegranate seeds, tamarind, salt, and cumin. It provides a tangy and flavorful complement to any meal.

Kumaoni Dal Bade:

Popular crispy fritters made from Kumaoni dal, known for their gluten-free preparation and health benefits. These are deep-fried to perfection and enjoyed across the region.

Sweets & Snacks Of Uttarakhand

Baadi:

This locally beloved snack is cherished not only by the people of Uttarakhand but also by visitors from outside the state. It has a tangy taste and is rich in essential vitamins. The lingering aroma and delectable flavor have made it a regional favorite.

Gulgula:

A sweet delicacy that should not be missed during your visit to Uttarakhand. Made with jaggery and a few basic ingredients, Gulgula is a commonly available snack. Its simplicity in preparation and delightful taste have made it a staple treat in the region.

Arsa:

Arsa is a much-loved sweet delicacy in Uttarakhand. Low in calories yet rich in taste, it is a favorite among both locals and tourists. This dish is often prepared during festivals and special occasions, making it an essential part of Uttarakhandi celebrations.

Singori:

Also known as Singauri, this popular sweet street food is made with khoa (thickened milk) and is uniquely wrapped in a maalu leaf, shaped like a cone. Especially famous in Almora, Singori holds a special place in the hearts of both locals and visitors.

Aloo Tuk:

Prepared in almost every household, this potato-based dish involves slicing potatoes into rounds, boiling them, and then garnishing them with flavorful spices and fresh coriander leaves. It is often enjoyed with Bhang ki Chutney, Poori, or Kumaoni Raita.

Kumaoni Raita:
